Candied Citrus Rind

You can use orange, lemon, lime or grapefruit rind (or all four together for added flavor and color) for this sweet and refreshing dessert snack. Can add to top of sherbet or just snack out of the jar!!!

Ingredients
  

  • 3 -5 lg Citrus Fruits (Orange, Lemon, Lime or Grapefruit)
  • c Cold Water
  • 4 c Sugar
  • 3 tbsp Corn Syrup

Instructions
 

  • Remove the Citrus Peel, Scraping Off the Pith.
  • Cut Rind Into ¼" Wide Strips.
  • Fully Immerse Rind in Saucepan Filled with Water, Bring to Boil, Then Reduce Heat and Simmer for 10 Minutes.
  • Drain and Rinse Under Cold Running Water. Then Repeat the Process Twice.
  • Sprinkle Baking Sheet with Sugar.
  • Boil 2 Cups Sugar in 1 Cup Water and Corn Syrup.
  • Add the Citrus Strips to the Sugar Syrup.
  • Stir the Simmering Syrup Until It Reaches 230°.
  • Transfer Citrus Strips to Baking Pan and Roll in Sugar.
  • Separate the Strips and Allow to Cool. Rack Overnight to Dry.
  • Keep Refrigerated to Extend Shelf Life.
