Cardamon Zucchini Bread with Ginger
Flavorful Zucchini Bread, best served with Butter or Creme Fraiche and Jam.
Ingredients
- 3 c Grated Zucchini
- 1½ c Sugar
- 1¾ c Flour
- 3 Eggs
- ¾ c Olive Oil
- 1 Lemon Zest from One Lemon
- 2¼ tsp Each Cardamon & Ginger
- 2 tsp Baking Powder
- 1 tsp Salt
Instructions
- Preheat oven to 350°, oil and flour sides and bottom of bread pan.
- Wring grated zucchini in dish towel to remove extra water.
- Add zucchini & vanilla to small bowl, mix well.
- Add sugar and lemon zest to larger bowl, mix well until sugar is moist from zest.
- Add Eggs & Oil to the Sugar Mixture and and Mix Well.
- Slowly Fold the Zucchini Mixture into the Sugar Mixture.
- In Separate Bowl, Sift Together Flour, Baking Powder, Salt, Cardamon & Ginger.
- Fold Dry Ingredients into Zucchini Mixture.
- Add Batter to Bread Pan and Bake for 1½ Hours Until Center Sets.
