Homemade Mayonnaise
Ingredients
- 1 egg (room temperature)
- 1½ c olive oil (extra virgin)
- 1 tbsp sherry vinegar
- 1¼ tsp salt
Instructions
- Add Egg, 1 teaspoon Olive Oil and Salt to Blender or Food Processor,
- Blend on Low Speed, Then Add Remaining Olive Oil Very Slowly. (This step is key)
- Continue To Blend on Low Until Desired Thickness is Obtained.
- For Thicker Mayonnaise, Increase the Speed to High for Additional 10-20 Seconds.
- Spoon Mayonnaise to Bowl & Fold In Sherry Vinegar Refrigerate.
Notes
To flavor mayonnaise, add the following to 1 cup of homemade mayonnaise after it has been chilled:
Lemon Herb: 1 garlic clove (finely diced), ¼ c mixed leafy herbs, 2 tbsp lemon juice & 1 tsp lemon zest
Orange: 6 tbsp orange marmalade, 1 tbsp orange zest, 1 tbsp finely diced chives
Serrano: 4 serrano chilis (seeded and finely diced), 1 tsp salt, 2 tbsp hot sauce
Sriracha: 1 garlic clove (finely diced), 3 tbsp sriracha, 2 tbsp lemon juice
Add salt & pepper to taste.
